Baked Salmon With Fresh Leeks Shallots and Tarragon

4 (6-8 oz.) Salmon Fillets
1/2 bunch leeks, julienned (white part only)
1 shallot, finely chopped
1/4 bunch fresh tarragon or 1 Tbsp. dried
1 cup white wine
Salt & pepper to taste


Preheat oven to 375 F.


In a baking dish arrange leeks and shallots into 4 piles. Place Salmon Fillets on top. Season Salmon with tarragon, salt and pepper. Pour wine around Salmon and bake until fish is firm but still moist. Lift Salmon and leeks together out of the pan onto plates. Splash some of the cooking liquid over each serving.
