Landlubber's Salmon Patties

1 Pink salmon; drained
1 Egg or 2 egg whites
1/2 c Cornflake cereal; crushed
1/4 c Onion; minced
2 tb Lemon juice
1 ts Oil

Mash salmon with fork. Add egg whites, crushed creal, onion and lemon juice. Mix throughly; form 4 patties. Heat oil over medium heat in a nonstick skillet. Add patties and cook 6-8 munutes or until brown; turn and cook 4-6 munutes or until brown. Serving size: 4-oz patty
