Baked Salmon With Vegetable Dressing

1 (5 lb.) piece of Salmon
Salt and pepper
1 (1 lb.) package soda crackers, crushed
3 large carrots, ground
1 cup celery, diced
1 large onion, diced
1/2 cup chopped parsley
1/2 cup bacon drippings or butter
1 tsp. sage
1 tsp. thyme
1 tsp. marjoram
2 eggs


Remove backbone from Salmon. Salt and pepper fish and lay aside. Combine remaining ingredients, 1/2 teaspoon salt and 1/2 teaspoon pepper, stuff Salmon. Bake in 350 degree oven for about 1 hour and 30 minutes.


Yields 10 to 15 servings
