Island Salmon Loaf

1 (1 lb.) can Salmon (preferably Red Sockeye)
1 (8 oz.) package cream cheese
1 Tbsp. lemon juice
2 Tbsp. grated onion
2 Tbsp. prepared horseradish
1/4 tsp. salt
1/4 tsp. liquid smoke

Drain Salmon. Remove skin and bones. Combine Salmon with cheese (allow cheese to come to room temperature so it will mix easily), lemon juice, grated onion, horseradish, salt and liquid smoke. Mix thoroughly; mold into a loaf and chill for several hours. Roll in nuts and parsley before serving.

Serves 6. This recipe can be used as a luncheon salad, or it makes a good hors d'oeuvre.
