Jiffy Salmon Patties

15 oz. can Salmon
1 cup fine bread crumbs or cracker crumbs
1/2 cup chopped green onions
1/4 cup chopped parsley
2 eggs, beaten
2 Tbsp. lemon juice
2 Tbsp. oil
1 tsp. prepared mustard

Drain Salmon; remove skin and bones, flake Salmon; reserve 1/3 cup liquid. Combine Salmon with bread crumbs, green onions and parsley. Add eggs, lemon juice, mustard and reserved Salmon liquid. Shape into patties. Fry patties in oil over medium heat until lightly browned on both sides. Serve hot.
