Hot Salmon and Cabbage Salad

2 cn Salmon (7.5 oz ea)
2 tb Vegetable oil
4 c Cabbage; finely shredded
2/3 c Carrot; grated
2 tb Vinegar
1 ts Sugar
1/2 ts Celery seed
1 ds Salt
2 tb Parsley; finely chopped
1/2 c Mayonnaise; light


Drain salmon and break in chunks. Stir-fry cabbage and carrots in oil 5 minutes or until tender crisp. stirring frequently. Sprinkle with vinegar, sugar, celery seed and salt. Add salmon and toss. Cover and reheat 3 to 5 minutes. Remove from heat. Fold in parsley and mayonnaise.
