Marinated Salmon and Avocado Salad

1/2 md Avocado (100g)
100 g Smoked salmon
1 md Onion, (120g), thinly sliced
125 g Cherry tomatoes, halved
4 Mignonette lettuce leaves
Marinade:
1 tb White vinegar
1 tb Lemon juice
3 ts Oil
1 Clove garlic, crushed
2 ts Drained capers, chopped
2 ts Chopped fresh parsley
1/2 ts Sugar
1/4 ts Dry mustard


Chop avocado, cut salmon into strips. Combine avocado, salmon, onion and tomatoes in bowl, add marinade. Cover, refrigerate for 1 hour before serving; serve in lettuce leaves.

Marinade:

Combine all ingredients in screw-top jar; shake well.
