Salmon Croquettes

1 cn Pink salmon; drained, picked over
1 Egg
1/2 Onion; finely chopped (up to 1)
1/2 Green pepper; finely chopped
Cracker crumbs (not bread crumbs)
Oil for frying


Mix the salmon, egg, onion and green pepper. Add cracker crumbs -- enough to hold everything firmly in place. Shape into patties, making sure they are tightly shaped. Roll patties in additional cracker crumbs, pressing crumbs in.

Fry in hot oil.

Serve with lemon slices, mashed potatoes, peas or green beans. Baked squash is a nice addition to this meal too!
