Salmon Patties

1 can Salmon (remove bones)
1 small onion, chopped fine or grated
1 stalk celery, minced
1 Tbsp. lemon juice
1 cup (or more) leftover mashed potatoes (or 15 crushed fine saltines)
1 egg

Mix all ingredients well. Drop by large spoonfuls in skillet with a little oil or butter. Flatten when brown. Turn and cook other side.
