Salmon Croquettes

1 tb Finely chopped onion
4 tb Margarine
2 tb Flour
1/2 c Skim milk
1 cn (7 3/4 ounces) pink salmon* well-drained, flaked
4 tb Fine dry bread crumbs

Saute onion in 2 tablespoons margarine just until tender. Stir in flour and cook 1 minute, stirring constantly. Blend in milk, cook and stir over medium heat until thick. Cool slighty. stir in salmon and pepper. Add 2 tablespoons bread crumbs. Mix throughly. Shape into 6 patties or logs. Roll in remaining crumbs. Saute in remaining margarine until evenly browned on all sides.

*For tuna croquettes use 1 can (7 ounces) tuna in place of salmon.
