Cream of Salmon Soup

1 can Salmon
1 onion, sliced
1 quart milk
2 Tbsp. butter
1/4 cup flour
1/8 tsp. pepper
1 tsp. salt


Break up Salmon into small pieces. Scald milk with onion, then remove onion (optionaI). Melt butter; blend in flour, pepper, and salt. Add milk gradually, stirring constantly. Add Salmon and cook until smooth and slightly thick.
