Salmon Croquettes

1 can Salmon, drained and bones removed
1 egg
1 small onion, chopped fine
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup cracker crumbs
1/2 cup oil

Mix well and form patties, using about 1/3 cup for each. Flatten and roll in crushed cracker crumbs or corn meal. Fry quickly in oil or shortening. Drain on paper towel and serve.
