Salmon Croquettes

1 can Salmon
1 egg, beaten
6-8 saltine crackers, crushed
1 medium onion, chopped
1/4 green pepper, chopped
Black pepper to taste

Mix all ingredients together except cornmeal. Breaking up the bones (good source of calcium). Shape into patties - roll into cornmeal. Put in hot cooking oil. Turn over when golden brown.

Serves 4
