Salmon Croquettes

1 3/4 cups Salmon
1 beaten egg
1 cup thick white sauce
1 tsp. lemon juice
Dash of pepper
1 cup bread crumbs

Make white sauce first. Combine Salmon and lemon juice with sauce. Season to taste and spread on plate to cool. Shape into patties. Dip in crumbs, egg and then crumbs again. Dry in deep fat at 375 F until golden brown. Drain on paper towel. Serve with tartar sauce.
