Baked Salmon

1 whole coho or sockey Salmon, about 4 lb.
Orange
Dill weed
Mayonnaise
(Garlic)


Butterfly fillet your fish. Put skin side down. Slice juicy orange and lay thin slices across fish. Dust with dill weed and a bit of fresh pressed garlic, if desired. Cover with mayonnaise. Bake uncovered about 1/2 hour or so (more if larger fish) in a 350 degree oven. It's done when meat flakes. Don't overcook.
