Salmon Rice Salad

2 cups Carolina rice, cooked & cooled
1 cup celery, sliced
1/2 cup green onion, sliced
1/2 cup sweet pickle relish
1 cup salad dressing
1/2 tsp. black pepper
2 (6 1/8 oz.) cans Chicken of the Sea skinless boneless Pink Salmon
1/2 cup red pepper, chopped
1/2 cup pine nuts
1 cup frozen peas, thawed
Lettuce leaves

Combine all ingredients and toss gently. Chill.

Serves 6
