Salmon Circle Loaf

2 cups or a pound Salmon, flaked and deboned
1 1/2 cups cooked tomatoes
1 3/4 cups stale bread crumbs
2 Tbsp. melted margarine
1 egg, well beaten
1 Tbsp. lemon juice
1 tsp. salt
1/4 tsp. pepper


Mix ingredients lightly. Pour into well greased circular mold. Bake in 425 degree oven for 20 minutes. Turn out onto round platter. Fill center with buttered peas and surround with tiny, whole beets.


Serves 6 to 8
