Salmon and Rice Ring

1 Tbsp. parsley
1 tsp. grated onion
1 Tbsp. lemon juice
1/4 cup milk
2 eggs
1 lb. can Salmon
Salt & pepper
3 cups cooked rice

Combine parsley, onion, lemon juice and milk. Beat eggs and add to mixture. Then add Salmon, seasoned with salt and pepper. Place layer of rice in greased ring mold. Cover with 1/2 Salmon mixture. Repeat. Place in pan of hot water and bake in moderate oven, 325 F for 1 hour.
