Salmon Lemon Loaf

1 (1 lb.) can Salmon (reserve 1/4 cup liquid)
1 tsp. grated lemon rind
2 Tbsp. fresh lemon juice
1/2 cup chopped onion
1 1/2 cups soft bread crumbs
1/8 tsp. Tabasco sauce
1 tsp. sugar
1/8 tsp. pepper
2 eggs, slightly beaten
1/4 cup chopped green pepper


Flake Salmon, combine with other ingredients. Moisten with Salmon liquid. Spoon into oiled quart loaf pan. Bake in 350 degree oven 35-40 minutes. Garnish with lemon slices.


Makes 4 servings
