Salmon Salad

1/2 cup black or green olives
1 1/2 cups flaked Salmon
1/2 cup diced celery
2 Tbsp. lemon juice
1/3 cup mayonnaise
Lettuce
1 boiled egg, quartered
Mayonnaise
Sliced cucumbers
Sliced tomatoes


Cut olives in halves. Combine with Salmon, celery, lemon juice and mayonnaise; toss lightly. Mound on four lettuce lined plates. Top each with a quarter of egg and a dollop of mayonnaise. Serve with cucumbers and tomatoes.


Makes 4 servings
