Pacific Salmon Loaf and Cucumber Sauce

1 (16 oz.) can Salmon, drained and flaked
1/2 cup dry bread crumbs
1/2 cup mayonnaise
1/2 cup chopped onion
1/4 cup chopped green pepper
1 egg, beaten
1 tsp. salt


Combine ingredients. Mix lightly. Shape into loaf in shallow baking dish. Bake at 350 F for 40 minutes. Serve with cucumber sauce.


Cucumber Sauce:


1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup finely chopped cucumber
2 Tbsp. chopped onion
1/2 tsp. dill weed


Combine all ingredients. Mix well. Serve with Salmon loaf.


Makes 6 to 8 servings
