Salmon Pie

1 can Salmon with juice
6 eggs, lightly beaten
3 potatoes, mashed
1 envelope Lipton vegetable soup mix
2/3 cup quick cooking Quaker oats
1 (9 in.) pie shell
Salt and pepper to taste
1 Tbsp. parsley
Sprinkle paprika


Lightly beat eggs; add mashed potatoes. Stir in soup mix and Salmon, including the juice. Add Quaker oats and parsley. If mixture seems too dry, add milk. Put mixture into pie shell, sprinkle with paprika.


Bake at 350 F for 45-55 minutes.


Suggested serving with creamed corn and salad.
