Purity Salmon Loaf

3 cups flaked Salmon
2 eggs, slightly beaten
1 Tbsp. chopped parsley
1 Tbsp. minced onion
2 Tbsp. lemon juice
1 tsp. prepared mustard
15 saltine wafers, crumbled
1 cup milk
1 tsp. salt
1/8 tsp. pepper
2 Tbsp. melted margarine or butter


Flake the Salmon and add all other ingredients in order given, mixing thoroughly. Press into a greased loaf pan and bake in a hot oven at 400 F for 35-45 minutes. Serve with egg sauce.


Egg Sauce:


To 1 cup of medium white sauce, add chopped hard boiled egg.
