Salmon and Peanut Butter Stew

1/3 cup chopped onions
1/3 cup chopped celery
1/2 - 1 bell pepper, sliced
1/4 tsp. ginger
2 1/2 Tbsp. butter
1 can tomatoes, chopped
1/2 - 2/3 cup water
1 tsp. salt
1/4 tsp. ground turmeric
1/2 tsp. pepper
1 1/2 cups peanut butter
5 cups cooked rice
2 to 4 Salmon Steaks
2 slices of lemon or 1 tsp. lemon juice

Saute onion, celery, and bell pepper in the butter. Add salt, ginger, turmeric, pepper, tomatoes, and water; bring to boil. Cover. Simmer for 20 minutes at medium heat. Season and broil Salmon until done. Heat peanut butter until it's melted and add to mixture. Place Salmon on bed of rice. Squeeze lemon juice on Salmon and cover with stew and serve.
