Salmon Chip Patties

1 can (15 1/2 oz.) Salmon
1/4 cup celery, finely minced
1/4 cup onion, finely minced
1 egg, beaten
1/2 cup mayonnaise
2 1/4 cups crushed potato chips
2 tsp. dried parsley
1/2 tsp. basil leaves
1/4 tsp. pepper
1 Tbsp. vegetable oil
1 Tbsp. margarine

Drain Salmon, flake and remove bones and skin. Add celery, onion, egg and mayonnaise. Then add potato chips, parsley, basil and pepper. Mix lightly and shape into patties. Chill patties for 1 hour.

Heat vegetable oil in skillet. Cook patties on medium heat until brown.

Makes 5 servings. Serve with macaroni salad and sliced tomatoes.
