Salmon Log Ball Or Dip

1 (1 lb.) can (2 cups) Salmon (omit liquid smoke if you use smoked Salmon)
1 (8 oz.) Neufchatel cheese
1 Tbsp. lemon juice
2 tsp. grated onion
1 tsp. prepared horseradish
1/4 tsp. salt
1 tsp. liquid smoke
1/2 cup chopped nuts, optional
1/2 cup grated cheese, optional
3 Tbsp. snipped parsley, optional


Flake Salmon, removing bones and skin. Add remaining ingredients. Chill several hours. Make into log or ball and roll in nuts or parsley, or use as a dip and top with chives.
