Salmon Or Tuna Patties

1 (6 12/2 oz.) can Salmon or 1 (6 1/2 oz.) can Tuna in water, undrained
1 egg
1/8 tsp. salt
1/4 tsp. black pepper
Cracker crumbs

Mix all ingredients together, except cracker crumbs; then add enough cracker crumbs to enable you to form mixture into patties. Be sure not to get mixture too dry. Coat patties with cracker crumbs. Preheat skillet, containing about 1/4 inch of oil, over medium heat. fry patties until well browned on both sides. Tuna substituted for Salmon is very economical and tastes very well.
