Salmon Pie

4 eggs, lightly beaten
1/2 cup milk
1 can cream of mushroom soup, undiluted
1 (15 oz.) can Salmon, drained and flaked
2 cups soft bread cubes (about 2 1/2 slices)
1 Tbsp. parsley
1 small onion, minced
2 Tbsp. butter, melted
1/2 tsp. lemon juice


In a large bowl, combine eggs, milk, and soup. Stir in remaining ingredients. Pour into a 10 x 6 x 2 inch baking dish. Bake at 350 F for 50 minutes or until the mixture appears set. Let stand 5 minutes before serving.


Yields: 6 to 8 servings. Great dish for a group gathering.
