Salmon Salad

1 lb. piece of Salmon
1 cup sour cream
1/2 cup chili sauce
1 Tbsp. lemon juice
4 tsp. horseradish
1 to 2 tomatoes
1 avocado
1 cucumber
Lettuce
3/4 cup shredded Cheddar cheese


Poach Salmon, drain and chill. Combine sour cream, chili sauce, lemon juice and horseradish. Refrigerate. Peel and slice tomatoes, avocado and cucumber. (If preparing avocado ahead, sprinkle it with lemon juice and salt to prevent discoloration.) At serving time, tear lettuce into small pieces and put in bowl. Flake Salmon into the bowl and add the tomatoes, avocado, cucumber and cheese. Add the sour cream mixture and toss.
