Low Calorie Salmon Casserole

1 lb. can Salmon, drained and flaked
2 cups cooked rice
1 cup thinly sliced celery, blanched
1/2 cup fresh parsley, chopped
1/4 cup mayonnaise
1 Tbsp. lemon juice
1/2 tsp. curry powder
Paprika


Combine Salmon, rice, celery and parsley in a large mixing bowl. In a small bowl, mix mayonnaise, lemon juice and curry powder. Add to Salmon mixture. Toss lightly. Turn into a 1 quart baking dish. Sprinkle with paprika. Bake at 400 F for 15 to 20 minutes or until bubbly hot. Yields 4 servings.
