Salmon Casserole

1 can (1 lb.) Salmon, drained, boned, flaked
1 cup croutons (cheese flavored)
2 Tbsp. green pepper, diced
2 Tbsp. parsley, chopped
1 large onion, minced
2 Tbsp. melted butter
1 cup grated Cheddar cheese
1/2 cup milk
3 large eggs, beaten
1/2 tsp. salt
1/8 tsp. pepper (optional)
1/4 cup lemon juice


Remove bones from Salmon add butter. Add all ingredients. Blend well. Turn into a greased 1 1/2 quart covered casserole. Bake 1 hour at 350 F. Maybe served with cream of mushroom sauce.
